Grassfed guacamole is basic and very low fat but rich tasting. Amp up the protein and control the fat content with either no fat, lowfat or Whole Milk AtlantaFresh yogurt. It is garlicy, with just enough Greek Yogurt and lemon to give fresh snap to the mellow, nutty avocado. Our recipe uses items that are widely available and usually in your pantry. Use these proportions, and increase to create the amount needed:
•1 ripe medium sized avocado
• 2 tbs Greek yogurt, + add more to taste
•1 pressed clove garlic to
•1 tsp lemon juice.
•Salt and pepper to taste.
Peel avacodo and add to medium sized mixing bowl.
Using a garlic press, press the garlic, or mince.
Squeeze the lemon juice and measure into bowl.
Mash all with a potato masher.
Add dry spices and mash again.
Adjust seasoning to taste.
CUMIN VERSION: add 1/8 tsp cumin to above
GARLIC POWDER VERSION: omit fresh garlic, use 1/2 tsp garlic powder.
